Pizza Dough

Makes 4 - 12” pizzas

Ingredients

DOUGH:
400 ml Lukewarm Water
5 grams yeast
5 grams sugar
620 grams flour
15 grams sea salt

Instructions

Making the dough in stand mixer:
In the mixing bowl add water, yeast and sugar, mix for 30 seconds. Next add 1/2 the flour about 320 grams and mix for 1 minute. Next add the salt and mix for 30 seconds. Ad the rest of the flour and mix for 15 minute until smooth dough ball forms.

Let it rise:

Coat a large bowl with little olive oil then gently place dough in bowl, coat your hands with olive oil and pat on top of the dough and allow to rest for 1-hour with cover to rise.

Remove dough onto work boardCut into 6 equal parts. Shape into balls making sure to keep the bottom sealed. Coat a sheet pan with flour and place dough balls about 3 inches apart, lightly rub the top of the dough balls with olive oil and cover with plastic wrap. Rest at room temp for 4-hours.

Shaping pizza

Coat work area with flour. Uncover one dough ball and remove from sheet pan with bench scraper. Place dough ball on the flour surface and sprinkle top with flour. Make sure to always keep the top on top. Lightly flatten out dough and start using finger tips just inside the edge of the dough to create the crust. Rotate dough to make it round. Pick up the dough and stretch with your knuckles slowly enlarging the circle.

Ready for toppings! Cook in the over on a pizza stone and the highest temperate. Preheat pizza stone at highest temperature for 45 min. using a pizza peel place topped pizza in the center and cook until bubbling and brown on the edges.
