Elotes Pan Dulce

Makes 6 elotes

2 Cups flour
1/2 Tbs Cinnamon 
1/2 cup sugar
1/4 tsp salt
1/2 cup water
1/2 tsp Vanilla extract optional
1/2 cup vegetable shortening

In a large bowl add all dried ingredients and whisk together. In the middle of the flour form a well and add all wet indigents and shortening. Mix until combined then kneed for about 5 minuets until soft dough is formed. Cut into 6 equal pieces and let rest for 5 min. 

Lightly dust a surface with flour to roll out the dough. Don’t roll the dough too thin cause it will break when filled. Once rolled out use a long knife to lightly press into the dough and pull slightly towards you, across the entire dough. Rotate your knife and do it again across the first direction to form small squares (images below). Pick up the dough and flip over lightly do not press out the pattern. Fill with your favorite jelly, marmalade or pie filling, I used apple pie filling. Flip over half the dough to cover the filling and roll from the edges to seal. The square pattern should be on top now. Place on lightly greased baking sheet seam side down.

Bake in a 360 degree preheated oven for 25 minutes. Then allow to cool on a cooling rack for 5 minutes before rolling in sugar. Let cool completely and enjoy.

Optional 
Yeast can be added for a softer more bread like finish or baking power for a crispier cracker like finish. If adding yeast let rise in a warm area for 10 minutes before baking.
